Creamy Citrus Slaw
What is it about the combination of fat and fresh that really works? This mayo based creamy citrus slaw with crunchy cabbage is exactly that. It is the perfect side or topper for blackened fish sandwiches or filling for shrimp tacos. It is easy to assemble with no heat cooking or chopping required.
INGREDIENTS, 4 SERVINGS
produce
1/2 bag slaw mix (reserve the other 1/2 for veggie bowls later in the week)
dressing
1/4 cup real mayo, Duke’s is a good choice as it contains no sugar
2 tbsp rice wine vinegar
1 tbsp agave
juice & zest from 1/2 lime
juice from 1/2 orange
salt & pepper to taste
*optional add ins, cilantro, fresh pineapple chunks, poppy seeds, fresh jalapeños
DIRECTIONS
- Mix all dressing ingredients in a bowl. Stir to desired consistency. Reserve half of the mixture for dressing the sandwich or tacos.
- Add slaw mix. Stir and coat.
- Refrigerate. Up to 24 hours ahead.
- Serve as desired.
